2 cups cooked brown rice
1 tbsp olive oil
1 lb brussels sprouts
1 lb green beans
1 lb of broccoli
4 - 6 cups of baby spinach
2 cans (15oz) chickpeas
For the Peanut sauce:
1 tbsp sesame (or olive) oil
2 tbsp coconut aminos (or soy sauce)
1 tbsp maple syrup (or sweetener of choice)
2 cloves garlic
1/2 cup peanut butter
MACROS (8 servings with 1/2 cup brown rice)
*Macros are approximate, weigh out your own food for more accurate numbers
